That depends on your taste and how you intend to use it. Glossy paper makes colours pop and provides high contrast, which makes baby's eyes shine. Matt paper, on the other hand, looks very elegant, does not reflect light and is much less sensitive to fingerprints – a big advantage if the book is often leafed through.
For a baby album, chronological sorting is almost always recommended. Start with the pregnancy or the day of birth and work your way forward month by month. This allows you to document the rapid growth and most important milestones in the most impressive way.
Less is often more. Try to place one large ‘hero image’ per double page and arrange a maximum of 2-3 smaller detail images around it to give the eye a rest and not weaken the effect of the individual motifs.
